The ingredients needed to make garlic spinach dip:
  1. Take mixture
  2. Prepare 6 cup spinach
  3. Make ready 8 clove garlic (minced)
  4. Prepare 1/4 cup onion (small dice)
  5. Get 1/4 cup green pepper (small dice)
  6. Make ready 1 tbsp olive oil
  7. Get 1/4 cup white wine (optional)

Let set in the fridge for a couple hours before serving. I like to serve it inside a hollowed out round loaf of bread. Blend spinach, garlic scapes, Parmesan cheese, olive oil, and pine nuts in a food processor until smooth; season with salt and pepper. In a microwave-safe bowl, combine spinach and water.

  2. saute onions and green pepper until softened.
  3. add spinach and cook until wilted (if fresh) or heated (if frozen)
  4. add garlic and saute for about a minute.
  5. add white wine and cook until wine is almost gone.
  6. transfer mixture into a strainer. sit strainer in bowl, place another bowl on top of spinach in strainer and set can good on top to add pressure. let strain for about an hour to remove access liquid.
  7. chop up spinach mixture once it is strained of all liquid.
  8. in large mixing bowl add spinach mixture, sour cream and cream cheese. mix until spinach is evenly spread, and mixture is smooth.
  9. refrigerate for atleast 30 mins before serving.
