While this cannot be a truly authentic tikka masala because we're using coconut milk for the creamy consistency, the spices are the typical Indian spices. Chicken Tikka Masala is an easy, sweet and spicy sauce that is thick, rich and creamy with an intense color of orange and red blend that has several spices blended together with creamy yogurt covering cubes of chicken breasts leaving you with an intense flavor all served over rice. - Put all ingredients into the slow cooker insert, stir and cook on low for 8 hours or high for 4 hour
- Optional: Reserve the carrots and sweet potatoes, adding in the last 2 hours. (If they cook the whole time, the sweet potatoes will be soft but I liked them that way.)
- Serve over basmati rice with a BIG dollop of plain yogurt on top. Swirl the yogurt in to make it more creamy, and also cool the masala quickly.
Let the slow cooker do all the work! Spray slow cooker with a non-stick spray. Layer the onions on the bottom of the slow cooker, followed by the chicken. Add the remaining ingredients and give the mixture a little stir with a spoon. When finished, remove chicken and shred or cut into serving pieces as you desire.
