Steps to make An-mitsu with Panda Shiratama Mochi Dumplings:
- First prepare the matcha kanten jelly. Shake in the powdered kanten into the water, and let it soak.
- Mix in sifted matcha into the granulated sugar.
- Heat Step 1 to dissolve the kanten.
- Add in the matcha sugar mixture from Step 2. Once it starts to simmer again and the sugar melts, remove from the heat.
- Pour the mixture in a mold and let chill to set.
- Cut into bite-sized pieces. (I used a cutter shaped like bamboo leaves for the cut-outs in this photo.) The water content in kanten easily separates from the rest of ingredients, so try to cut them just before serving.
- Now prepare the shiratama pandas. Add water to the shiratamako and knead well until the dough is as soft as your earlobe.
- Divide into three portions. Take a smaller portion out of each of the three, then mix in cocoa, matcha, and strawberry powder.
- Divide each of the three plain shiratama dough portions into six, and shape into circular discs.
- Shape the nose, ears, and eyes with the dough mixed with cocoa, strawberry, and matcha powders.
- This is how they should look.
- Boil some water in a ;ot, and drop your pandas in. Once they float up to the surface, wait another 1-2 minutes before taking them out.
- If you use a spatula, you'll be able to lift them up nicely.
- After they've boiled, place them into a cold water bath. Strain, and drain the excess water.
- Portion out the tsubu-an and fruits into a small plate or bowl, position the pandas, and pour the kuromitsu on top.

Foods That Make You Happy
Many of us have been trained to think that comfort foods are bad and should be avoided. At times, if your comfort food is made of candy or other junk foods, this is true. At times, comfort foods can be perfectly nourishing and good for us to consume. There are several foods that basically can raise your moods when you consume them. If you seem to be a little bit down and you’re needing an emotional pick me up, try several of these.
Eggs, believe it or not, can be actually terrific at beating back depression. Just make sure that you do not throw out the yolk. The egg yolk is the part of the egg that is the most crucial in terms of helping elevate your mood. Eggs, the yolks particularly, are rich in B vitamins. B vitamins can really help you elevate your mood. This is because these vitamins improve the function of your brain’s neural transmitters (the parts of the brain that tell you how to feel). Try eating some eggs to feel better!
Make a trail mixout of different seeds and nuts. Almonds, cashews, peanuts, pumpkin seeds, sunflower seeds, etcetera are all helpful for elevating your mood. This is because these nuts are rich in magnesium, which helps to raise serotonin production. Serotonin is a feel-good substance that tells the brain how to feel at any given point in time. The more you have of it, the more pleasant you will feel. Not only that, nuts, in particular, are a terrific source of protein.
Cold water fish are great if you are wanting to feel happier. Cold water fish such as tuna, trout and wild salmon are rich in DHA and omega-3s. Omega-3 fatty acids and DHA are two things that promote the quality and the function of your brain’s grey matter. It’s the truth: eating tuna fish sandwiches can truly help you overcome your depression.
It’s not difficult to overcome your bad mood when you consume grains. Barley, millet, quinoa, etc are terrific at helping you feel better. They fill you up better and that can help improve your moods as well. Feeling starved can really bring you down! These grains can elevate your mood since it’s not at all difficult for your body to digest them. They are easier to digest than other foods which helps raise your blood sugar levels and that, in turn, elevates your mood.
Your mood can truly be helped by green tea. You knew it had to be in here somewhere, right? Green tea has been found to be packed full of an amino acid called L-theanine. Studies prove that this particular amino acid can actually stimulate brain waves. This helps improve your mental energy while at the same time relaxing the rest of your body. You knew that green tea helps you be healthier. Now you know it can help raise your mood too!
As you can see, you don’t need to stuff your face with junk food when you are wanting to feel better! Try some of these suggestions instead.
